The owners of Hotel Sorrento wanted to revive a problem space - the original Hotel Sorrento ballroom, previously home to several short-lived restau- rants. Creating a brand and turning. The space into an intimate, sensory, booked-out Cantonese dining experi- ence. Shihuishi, meaning limestone in Can- tonese, takes its name from the history and architecture of Hotel Sorrento. As the brand evolved, we looked at 1960s Cantonese eateries and the cinemat- ic and photographic works of cultural classics, Wong Kar Wai and Fan Ho.
